Easy Tofu and Noodle Veg brunch or anytime snack bowl.
This is GREAT for breakfast, a great SUPER HEALTHY alternative to bacon, eggs, porridge etc etc – EASY EASY – made in ten mins, and nourishing.
Tofu (in moderate quantity) is a great source of phytoestrogens, esp for women 50+ (Anti aging – we like 😃)
Cook one bunch Soba noodles in boiling water for 3 minutes, drain, place in bottom of bowl. (you may use left over brown rice or rice noodles)
Slice one carrot into batons and simmer in one cup of water, add approx 150gram chunk of Tofu (I use Silken non GMO) into carrot water, slice in half, cook one minute.
Remove from the heat, place tofu on top of noodles in the bowl.
Stir through one tsp Miso Paste (I use Urban Hippy) to carrots and remaining water, add seaweeds (Pacific Harvest NZ brand) spring onion, any fresh garden greens.
Pile this hot broth over the noodle/tofu bowl, drizzle with Tamari and Sesame oil and enjoy !!!
