By the early 20th Century, scientists had discovered a correlation between the incidence of certain diseases and conditions and the diets of those affected.
This led to a wide-scale investigation into the effects of diet on health, and in particular, the effects of specific nutrients; how they are stored, how they are used, and what role they play in your overall health. The results were astonishing, for the first time scientists were able to isolate vitamins and minerals (which they then had to name) and attribute dietetic roles to each. This particular area of study branched out into what we now know as Clinical Nutrition; and it is an ongoing field of very active investigation.
