HEMP PROTEIN COOKIES (Dairy Free, Gluten Free, Vegan, Refined Sugar Free)
These cookies are packed with protein, fibre and good fats that keeps your energy on a smooth-even keel. They make the perfect mid-morning, afternoon or anytime snack.
Ingredients
8 pitted medjool (or any variety) – soak in boiled water 10mins then drain
1 TBSP coconut butter – warmed in small bowl sitting in larger bowl 1/4 full of boiled water
1 TBSP maple syrup
½ tsp natural vanilla extract
2 TBSP hemp protein (I used MACRO Wholefoods Market Hemp Seed Protein Powder, found at Countdown supermarket)
½ cup crunchy peanut or almond butter
½ cup desiccated coconut
Method
Heat oven to 180 C
Soak dates in boiled water for 10 minutes, then drain
Place dates, nut butter, maple syrup and vanilla into blender and pulse until combined
Add remaining ingredients and blend until mixed well
Scoop out with teaspoon and roll into balls, gently press then place on baking paper lined oven tray
Add any of the optional add-ins – I used a small chunk of ‘Green and Black’s Organic 70% dark chocolate’ into the centre (this will contain a small amount of organic raw sugar)
Bake 20 minutes, let cool on tray.

Optional add-ins: a small handful of raisins, ½ tsp cinnamon or 1 TBSP cacao/cocoa.
